Upon graduation from the Culinary Institute of America in 1997 Chef Joseph accepted a position at Boston's landmark hotel, The Regal Bostonian under the leadership of CIA alumni chef Peter McCarthey. Joseph quickly climbed the ranks and decided to accept a position with acclaimed chef Jaime Mamano at his new restaurant Mistral. It was at Mistral, under the mentorship of chef Jaime that Joseph spent the next 7 years. Joseph helped the group open it's sister restaurant Teatro in 2002 as Executive Sous Chef and eventually returned to Mistral to lead the kitchen there for the next two years. Looking for a new challenge, Joseph accepted the opportunity to open a new concept from the ground up. Under Joseph's leadership, Stella quickly became one of Boston's hottest restaurant with features in local as well as national publications such as the New York Times. Having always dreamed of living in a wine country, Joseph seized the moment and moved to California's San Francisco Bay and spent the next year exploring the famous Napa and Sonoma valleys. Forging relationships with artisans and producers. Moving back east Joe took the reigns at L'Andana, a newly opened wood fired grill with Tuscan cuisine created by Jamie Mamano. A long trip to Italy surrounded by the passions of a culture that has influenced every day of his life prompted Joseph to create something new, his next venture, Posto.

Edson Coimbra, Jr
General Manager
The youngest of 3 boys, Edson Coimbra, Jr. was raised into a family with a medical & educational background. Edson was born in Brazil where his father, Edson Coimbra, Sr. is a well known pharmacist in the heart of the city he grew up. His mother, Valda Coimbra, was a successful School Teacher in Brazil but later years moved to Boston.
As a young teenager, Edson also moved to Boston to challenge himself and to explore his new surroundings. He was determined to better his life quality by putting himself into school. Edson attended the University of Massachusetts Boston for English.
Edson found that he was drawn to making a positive difference to people lives, and was passionate about the hospitality industry. He enjoyed the combination of fine dining and his passion to bring memorable experiences to his guests.
Edson was hired to be a part of the Columbus Restaurant Group as a Restaurant Server at The Federalist, now Mooo in July 2002. In 2006 Edson helped open Sorellina. He was quickly promoted to Dining Room Manager where he excelled at customer service and guest relations. In April 2008 Edson was then promoted to General Manager of L'Andana in Burlington Ma where he used his talents to establish L'Andana as the premier dining destination north of Boston.
Having fulfilled his goals of creating a wonderful guest experience in Burlington, Edson looked outward for his next challenge and teamed up with former colleague Chef Joe Cassinelli at his new restaurant Posto in Somerville MA. It is here at Posto where Edson is using his years of experience in fine dining restaurants to help create a new service standard and wonderfully unique dining experience.
